Sushi Preparer – Japanese Kitchen

About the role

The Sushi Preparer will work in a fast‑paced Japanese kitchen, preparing and finishing a variety of sushi and related dishes. The role involves both food preparation and maintaining a clean, sanitary work environment.

Key responsibilities

• Prepare, heat and finish simple food items, portion and wrap foods for take‑out.
• Wash, peel, cut and slice vegetables, fruit and other ingredients.
• Operate dishwashers, conventional ovens, deep fryers, grills and food dispensers.
• Clean and sanitize kitchen surfaces, equipment, utensils and storage areas.
• Receive, unpack and store supplies in refrigerators, freezers and cupboards.
• Maintain records of food quantities, replenish condiments and stock refrigerators.
• Handle kitchen waste, sharpen knives and manage heavy loads up to 23 kg.
• Serve customers at counters or buffet tables and ensure a tidy dining area.

• Food preparation techniques such as slicing, trimming and portioning.
• Sanitation and cleaning procedures for kitchen equipment.
