Pastry Chef

About the role

The Pastry Chef at Holt Renfrew will design and execute dessert menus, afternoon‑tea offerings, and a full range of pastries for a luxury retail environment. You will ensure every product meets the brand’s high standards for taste, presentation, and consistency.

Key responsibilities

• Maintain pastry culinary standards for quality, taste, and presentation.
• Train and develop kitchen staff in pastry techniques.
• Support Executive Chef’s standards and ensure timely execution.
• Supervise and motivate the pastry team to deliver exceptional service.
• Create profitable dishes that align with seasonal sales and margin targets.
• Develop innovative afternoon‑tea dessert items, leveraging vendor partnerships.
• Ensure compliance with health, safety, and hygiene regulations.
• Control food waste, manage stock rotation, and keep prep/storage areas clean.
• Track ingredient usage, assist with ordering, and maintain recipe databases.

Required profile

• High school diploma and culinary school graduation.
• Minimum 5 years experience in a renowned pastry kitchen.
• Positive, enthusiastic attitude with strong guest‑service focus.
• Excellent leadership and communication abilities.
• Broad pastry and bakery knowledge, especially with chocolate and sugar.
• Strong attention to detail.
