About the role
The Pastry Chef at Holt Renfrew will design and execute dessert menus, afternoon‑tea offerings, and a full range of pastries for a luxury retail environment. You will ensure every product meets the brand’s high standards for taste, presentation, and consistency.
Key responsibilities
- Maintain pastry culinary standards for quality, taste, and presentation.
- Train and develop kitchen staff in pastry techniques.
- Support Executive Chef’s standards and ensure timely execution.
- Supervise and motivate the pastry team to deliver exceptional service.
- Create profitable dishes that align with seasonal sales and margin targets.
- Develop innovative afternoon‑tea dessert items, leveraging vendor partnerships.
- Ensure compliance with health, safety, and hygiene regulations.
- Control food waste, manage stock rotation, and keep prep/storage areas clean.
- Track ingredient usage, assist with ordering, and maintain recipe databases.
Required profile
- High school diploma and culinary school graduation.
- Minimum 5 years experience in a renowned pastry kitchen.
- Positive, enthusiastic attitude with strong guest‑service focus.
- Excellent leadership and communication abilities.
- Broad pastry and bakery knowledge, especially with chocolate and sugar.
- Strong attention to detail.
