Head Chef – Sushi & Japanese Cuisine

About the role

We are looking for a Head Chef to lead the kitchen at KOTO Sushi Lounge in Calgary. The role focuses on sushi and Japanese cuisine, ensuring high‑quality dishes while managing a small team of cooks and coordinating shift, day and weekend schedules.

Key responsibilities

• Estimate amounts and costs of supplies, food items and labour.
• Maintain records of food costs, consumption, sales and inventory.
• Demonstrate new cooking techniques and equipment to staff.
• Create new recipes and plan menus that meet quality standards.
• Prepare and cook complete meals and specialty foods for events such as banquets.
• Supervise and train 3‑4 cooks and other kitchen personnel.
• Arrange equipment purchases, repairs and routine maintenance.
• Recruit, hire and onboard kitchen staff.
• Ensure compliance with health and safety regulations.
• Monitor food preparation and presentation standards.
• Control waste and optimise kitchen efficiency.

Required profile

• Secondary school graduation certificate or equivalent experience.
• 1 to less than 2 years of experience in sushi or Japanese cuisine.
• Experience supervising a small kitchen team.
• Ability to work shift, day and weekend schedules.
• Strong attention to detail in food quality.
