About the role
The Fairmont Empress is seeking a motivated Chef de Partie to join its award‑winning culinary team. This full‑time position will work in a high‑profile hotel kitchen, delivering exceptional food for both à la carte and buffet services while upholding the property’s renowned standards.
Key responsibilities
- Lead a shift, station or specific area of the kitchen, supervising a team of culinary professionals.
- Prepare and service all food items for à la carte and buffet menus according to hotel recipes and standards.
- Collaborate with the Executive Chef and Sous Chefs to prioritize, delegate, and assign duties to journeypersons, cooks, assistants and stewards.
- Ensure consistent food quality, portion control, and presentation throughout service.
- Model positive behavior, maintain a clean and safe work environment, and mentor junior staff.
Required profile
- Proven experience in a high‑volume hotel or fine‑dining kitchen.
- Strong understanding of hotel culinary standards and recipe execution.
- Ability to lead a team, manage time effectively, and maintain high standards under pressure.
- Commitment to food safety, hygiene, and quality control.
Required skills
- Food preparation for à la carte and buffet menus.
- Knowledge of hotel recipes and culinary standards.
- Ability to prioritize, delegate, and assign duties to kitchen staff.
