Chef de Cuisine – Head Chef

About the role

The Chef de Cuisine will lead the kitchen at Piano Piano Colborne Inc., overseeing all culinary operations in a fast‑paced, high‑volume restaurant environment. This senior position reports directly to senior management and is responsible for delivering high‑quality Italian cuisine while ensuring safety, efficiency, and profitability.

Key responsibilities

• Estimate and control food and labour costs, maintain detailed cost and inventory records.
• Develop and demonstrate new cooking techniques and equipment to kitchen staff.
• Supervise and train specialist chefs, sous‑chefs, cooks, and other kitchen workers (over 20 staff).
• Recruit, hire, and schedule kitchen personnel.
• Prepare dishes for customers with allergies or dietary restrictions.
• Manage equipment purchases, repairs, and requisition of supplies.
• Analyze operating costs and sales data to improve profitability.

Required profile

• Secondary school graduation or equivalent experience.
• Minimum 5 years of experience in a managerial kitchen role.
• Safe Food Handling certificate.
• Strong leadership, dependability, and excellent communication skills.
• Ability to work under pressure, meet tight deadlines, and stand for extended periods.
